This wooded mountainous region creates the ideal environment to allow these temperamental plants to grow to their optimal maturity of four years before harvesting. Wasabi cultivation from this prestigious region dates back to the Edo period, 400 years ago. These treasured rhizomes are individually quick frozen to lock in freshness and allow them to be available year-round.
